I am trying to better understand the Datum features ( Points, Planes, Axis Coordinate system) in Structure Part Mode.

I search YouTube but cant find anything.

If anyone has examples their willing to share, Its appreciated.

What specifically are you looking for? The use of Datum's is for a reference or construction. It has many different use cases for each. They are standard practice for traditional parametric CAD so there might not be a simple video explaining a basic case for it. I had an example in a ring type model where all the parts are based off a central location and parametrically change about that location so the datums came in handy solving the case. I've used the points and planes for loft examples as well when they had to parameters changing in many different variables. It can be done without them, but in some cases, they make it a bit easier if it is well defined (that is a big factor of course).

The shape relations will show feature related (or referenced) to the selected plane.

I've been out of parametric CAD for so long I need to refresh myself with this. If there are any videos laying around, I wouldn't mind see them.
